Okroshka is a cold summer soup based on kvass, traditional in Russian and Central Asian cuisine. The main secret of a tasty okroshka is the right kvass. We explain which kvass to choose, how okroshka kvass differs from a regular one, and share a tried-and-tested recipe.
Which kvass to choose for okroshka
Not every kvass works for okroshka. Sweet, lemonade-style drinks turn the soup into a dessert, and overly fizzy kvass overpowers the vegetables. For okroshka you need a balanced kvass — unsweetened or only mildly sweet, rye- or bread-based, with a rich, slightly sour profile and moderate carbonation. And — preferably live kvass, because pasteurization strips the drink of that characteristic yeasty note that makes okroshka feel authentic.
You'll typically find three categories on the shelf. Sweet, heavily carbonated kvass — essentially lemonade and unsuitable for okroshka. Pasteurized "Russian-style" kvass — a compromise: the flavor is recognizable but flat. Naturally fermented live kvass — the optimal choice: rich malty flavor, gentle natural acidity and live enzymes give okroshka exactly the right character.

BioClub Okroshka kvass — what it is and how it differs
The BioClub lineup includes a dedicated product for okroshka — BioKvass Okroshechniy. It's a naturally fermented bread kvass with sweetness and acidity tuned specifically for cold soup: slightly less sweet than regular bread kvass, with a more pronounced malty note. No flavorings or sweeteners — just natural fermentation on rye malt and bread starter.
Bottle volume — 1 liter. That's enough for 4 family-size portions of okroshka or one large "for tomorrow" pot. Store in the fridge and chill to 4–6 °C before use.
The catalog also has five other BioClub flavors — browse the full kvass lineup: bread, rye, honey, cranberry and barberry.
Classic okroshka recipe with kvass
Ingredients for 4 servings:
- BioKvass Okroshechniy — 1 L
- boiled beef or boiled sausage — 300 g
- boiled potatoes — 4 pcs
- fresh cucumbers — 3 pcs
- radishes — 6–8 pcs
- boiled eggs — 4 pcs
- green onion — a small bunch
- dill, parsley — to taste
- sour cream — 4 tbsp
- mustard — 1 tsp (optional)
- salt — to taste
Instructions:
- Boil potatoes and eggs in advance, cool and peel. Boil and chill the meat as well.
- Cut all the firm ingredients — meat, potatoes, cucumbers, radishes, eggs — into uniform 5–7 mm cubes. The neater the dice, the nicer the texture.
- Finely chop the green onion and rub it lightly with a pinch of salt — this releases more aroma. Chop the dill and parsley.
- Combine all the chopped ingredients in a large pot or bowl, add the mustard and sour cream, and stir. Salt to taste.
- Pour over the chilled kvass and gently mix. Let rest in the fridge for 10–15 minutes.
- Ladle into bowls, top with a spoonful of sour cream, and serve with fresh bread.
Lenten (vegetarian) okroshka with kvass
For a lenten or vegetarian version, replace the meat with boiled beans or chickpeas — that provides the necessary plant protein and keeps the dish satisfying. Sour cream can be replaced with thick, unsweetened plant-based yogurt, or simply omitted — okroshka with kvass is rich enough on its own. The rest of the ingredients and proportions stay the same.
Tips for the perfect okroshka
- Chill the kvass in advance — at least 4 hours in the fridge, ideally overnight. Warm kvass ruins both the flavor and the very point of a cold soup.
- Cut the vegetables into uniform 5–7 mm cubes. The dish looks tidier, and every spoonful is balanced.
- Rub the green onion with salt — it opens up the aroma and tames excess sharpness.
- Mustard is optional but adds the signature piquant accent. One teaspoon per pot is enough.
- Serve immediately, or chill the bowls in the freezer beforehand. You can add an ice cube — especially in hot weather.
